ROAST VEGETABLE BAKE

Serves: 4     Est. Time: 30 mins     Difficulty: One Star


Handy Hints:

  • This meal is great for disposing of any baked vegetable leftovers that you may have in the fridge.

Ingredients:

    5 eggs
    2 cups chopped baked vegetables
    2 tablespoons plain flour
    1/2 cup grated tasty cheese
    1/4 cup chopped parsley
    season to taste

Directions:

1   Whisk eggs well. Add vegetables, flour, cheese, parsley and seasonings.
2   Pour into a greased pie or casserole dish and bake in a moderate oven (180C) for 20-25 mins or until set.
3   May be served hot or cold.
