SWEET POTATO FRIES

Serves: 4     Est. Time: 40 mins     Difficulty: One Star


Ingredients:

    4 medium size (about 2 lbs.) sweet potatoes
    Canola oil
    Coarse salt or powdered sugar

Directions:

1   Peel potatoes and cut into 3 by ¾ inch wedges. Place in large bowl, cover with cold water, and set aside to soak for twenty minutes.
2   In large skillet, heat ¼ inch oil until deep-fat thermometer registers 300°F. Drain potato wedges and pat dry. In batches, fry potatoes in oil, turning frequently - 8 to 10 minutes or until lightly browned. Add more oil, if necessary.
3   Once ready, drain on paper towels; sprinkle with salt or sugar if you want, and serve.
