YOGHURT & CUCUMBER DIP

Serves: 8+     Est. Time: 90 mins     Difficulty: Two Stars


Ingredients:

    250g plain yoghurt
    1 medium cucumber
    1 clove garlic, crushed
    1 tablespoon olive oil
    1 teaspoon chopped dill
    2 teaspoons lemon juice
    savoury cracker biscuits to serve
    salt to taste

Directions:

1   Drain yoghurt by placing in a muslin-lined strainer over a bowl for at least an hour.
2   Wash and grate the cucumber and drain as above.
3   Combine yoghurt, cucumber and garlic and gradually beat in olive oil. Add remaining ingredients.
4   Chill and serve with savoury cracker biscuits.
