TOMATO SALSA

Serves: 6+     Est. Time: 10 mins     Difficulty: One Star


Handy Hints:

  • Be careful not to over-process in late stages of preparation. This salsa is best served 'chunky'.

Ingredients:

    4 large, ripe tomatoes
    1 cucumber
    1 tablespoon olive oil
    1 tablespoon red wine vinegar
    2 cloves crushed garlic
    1/2 teaspoon crushed red chilli
    1/2 tablespoon tomato paste
    1/2 teaspoon sugar
    salt and pepper to flavor

Directions:

1   Chop tomatoes into small cubes.
2   Peel the cucumber, cut in half (lengthwise), scoop out seeds and cut into small cubes.
3   Place tomato and cucumber into food processor and roughly combine with olive oil, vinegar, garlic, tomato paste, sugar and salt & pepper.
