TANGY MAYONNAISE

Makes: 2 cups     Est. Time: 10 mins     Difficulty: Two Stars


Ingredients:

    2 egg yolks
    ½ teaspoon salt
    4 tablespoons lemon juice
    1 teaspoon dry mustard
    1½ cups vegetable oil
    Dash pepper

Directions:

1   Beat yolks until thick and lemon colored in a deep bowl. Beat in dry mustard, salt, pepper, and 2 tablespoons of lemon juice. Drop by drop add oil, while mixing, to mixture until ½ cup oil has been added. Continue to beat while adding another ½ cup oil in a thin stream. Beat in remaining lemon juice and remaining oil in thin stream until mix is creamy and thick.

If you add oil too quickly, and mix begins to separate, beat one egg yolk in a second deep bowl, gradually beat in mixture, until smooth and well blended.
