HOMMUS DIP

Serves: 6+     Est. Time: 15 mins     Difficulty: Two Stars


Ingredients:

    1 cup of cooked chickpeas
    3 tablespoons lemon juice
    3 tablespoons tahini (sesame paste)
    2-4 cloves crushed garlic
    1/2 teaspoon ground cumin
    3 tablespoons olive oil
    2 tablespoons apple cider vinegar
    salt and freshly-ground pepper

Directions:

1   Cover soaked and drained chickpeas in hot water and cook until tender.
2   Combine cooked chickpeas with lemon juice, tahini, garlic, cumin, olive oil, vinegar, salt & pepper in a food processor.
3   Process to a smooth consistency and add extra lemon juice, garlic, etc. as needed.
