CHEESE SAUCE

Makes: enough to cover 1 lb pasta     Est. Time: 12 mins     Difficulty: One Star


Ingredients:

    2 tablespoons butter
    2 tablespoons flour
    2 cups milk
    1 cup grated cheese or cheeses
    Salt and pepper to taste

Directions:

1   In a medium saucepan, heat the butter. Gradually add the flour, stirring, to create a roux. Let it cook for about 1 minute, or until golden brown.
2   Slowly add the milk, a bit at a time, whisking until you have a smooth sauce. Let it cook for about five minutes, until thick enough to coat the back of a spoon.
3   Add salt and pepper to taste. Slowly add the cheese and keep the sauce warm over a very low heat (don't let it boil).
