TACO SALAD

Serves: 2-4     Est. Time: 15 mins     Difficulty: One Star


Ingredients:

    1 pack Fritos corn chips
    1 can chile, with or without beans (or make your own)
    2 cups rice, cooked
    1 onion, chopped
    shredded lettuce
    chopped tomato
    grated cheese (your choice of type)

Directions:

1   Boil rice and set aside.
2   On bottom of bowl crunch up some frito corn chips. Spread hot rice over top, then layer chopped onions and hot chili on top of that. Complete the arrangement by adding shredded lettuce, chopped tomatoes and cheese.
2   Serve with crackers and enjoy warm, or chilled.
