CREOLE BANANA SALAD

Serves: 4-6     Est. Time: 5 mins     Difficulty: One Star


Ingredients:

    3 cups cooked brown rice
    4 large bananas, peeled and sliced
    4 teaspoons lemon juice
    1 medium red apple, cored and chopped
    1 cup seedless green grapes
    1 cup fresh, sweet pineapple, chopped
    2-3 tablespoons buckwheat (sprouted is best)
    1 tablespoon natural sultanas
    ¾-1 cup mayonnaise
    lettuce cups
    nutmeg
    ginger, ground (optional)

Directions:

1   Place the rice in a bowl and add the bananas, lemon juice, apple, grapes, pineapple, buckwheat and sultanas.
2   If desired, flavor mayonnaise with a little ground ginger and toss lightly through salad.
2   Pile the mixture into lettuce cups and dust with nutmeg. Serve chilled.
