MOZZARELLA & RED PEPPER MELT

Serves: 1     Est. Time: 10 mins     Difficulty: Two Stars


Ingredients:

    2 teaspoon wine vinegar
    Salt and pepper
    4 teaspoons olive oil
    3 oz. mozzarella (about ¾ cup grated)
    1 small roasted red pepper
    1 Italian roll
    1 tablespoon fresh basil strips

Directions:

1   Combine vinegar, 2 pinches of salt, one pinch of pepper, and oil. Cut red pepper into strips.
2   Split roll and toast it. Put on two folded paper towels on a microwavable plate. Sprinkle cheese on toast. Arrange red pepper on top and sprinkle with salt and pepper. Microwave, uncovered, on high until cheese melts, about 1 minute. Sprinkle with basil and vinegar and oil. Serve hot.
