THAI FISH CURRY

Serves: 4-6     Est. Time: 25 mins     Difficulty: Two Stars


Ingredients:

    1 tablespoon oil
    1/4 cup chopped onion
    1 tablespoon Green Curry Paste
    1 cup coconut cream
    1 cup fish stock
    1 tablespoon brown sugar
    1 tablespoon Thai fish sauce
    4 fillets white fish cut into chunks
    lemon/lime juice to taste

Directions:

1   Heat oil in frypan or wok, add 1/4 cup onion and fry until softened.
2   Add curry paste and fry for 1-2 min. Add cream and stock. Simmer 10 min.
3   Add sugar, fish sauce and fish. Simmer gently for 5-10 mins.
4   Add lemon juice and serve with Jasmine rice.
