BOILED FRUIT CAKE

Serves: 6     Est. Time: 125 mins     Difficulty: Two Stars


Ingredients:

    400g mixed dried fruits
    1 cup brown sugar
    250g butter or margarine
    1 cup sweet sherry
    1/4 cup water
    1 teaspoon mixed spice
    1 teaspoon bicarbonate of soda
    1 tablespoon golden syrup
    little grated lemon rind
    1/2 cup slivered almonds
    2 eggs, beaten
    1 cup self-raising flour
    1 cup plain flour

Directions:

1   Place all of the above ingredients (except eggs and flour) into a large saucepan, bring to the boil, simmer for a few minutes.
2   Take from the heat, allow to cool slightly, then add eggs and flour. Blend well into the fruit mixture.
3   Turn into greased round cake pan. Bake in moderate oven for approximately 1 1/2 to 2 hours.
4   Test with skewer for doneness. Allow cake to cool in tin before turning out.
